Having gone through pilot training, I can tell you simulators only do so much and are already used aggressively. As for your new 767 captain taking that flight from NYC to ATL, he didn't burn one gallon of fuel that was not part of a scheduled route. As much as the flying public may wince, the first time a captain takes the controls of a major airline, it is on a paying route. All prior training for the aircraft was in a simulator.
